Hi, I’m Lucy short for Rosa Lucía Bellini. I live in San Miguel de Allende, Mexico, but my roots stretch all the way to Parma, Italy. I’m a home cook, a housewife, and someone who learned (the hard way) how to fall in love with food again after going gluten-free.

Cooking wasn’t always my plan, I was a schoolteacher. But after being diagnosed with a gluten intolerance, I had to rethink everything I knew and loved about food. So I started experimenting, mixing my Italian family recipes with Mexican ingredients, and discovering new ways to make the meals I missed without the gluten, but with all the soul.

Gluten Free Meal Digest is where I share those recipes. It’s a cozy space for anyone who’s had to make food changes, or just wants to cook something delicious at home. No fancy techniques. Just real food, made with care, and a little creative flair.

I still mess up sometimes (don’t ask about the burnt tortilla lasagna), but that’s part of the fun. If you love cooking with your hands and heart, you’re in the right place.
