- Puree the lime juice, white vinegar, chili powder, ground cumin, salt, pepper, pineapple, red onion, and chipotle peppers in a blender. Stir in the beer.
- Combine the pork and the pineapple mixture in a slow cooker. Cook on low for 6-8 hours, or until the pork is very tender. Stir to break up the pork.
- Stir the cilantro into the mango salsa.
- Serve the pork mixture in warmed tortillas. Add the salsa and desired toppings.
