- Season the sirloin steak with chili powder, cumin, garlic salt, and black pepper. Drizzle with vegetable oil and the juice of half a lime.
- Heat a skillet over medium-high heat. Cook the steak for 3-5 minutes per side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before thinly slicing.
- Spread refried beans and mayonnaise on the split rolls.
- Layer the sliced steak, Monterey Jack cheese, tomatoes, and lettuce onto the bottom halves of the rolls.
- Add optional toppings like avocado, red onions, jalapeños, and hot sauce. Place the top halves of the rolls on top.
