- In a large bowl, whisk together the eggs.
- In a separate shallow dish, combine the flour, panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Mix well.
- Dip each cauliflower floret into the egg, then dredge it in the flour mixture, ensuring it is fully coated. Place the coated florets on a baking sheet.
- Let the coated cauliflower sit for about 10 minutes to allow the coating to adhere.
- Preheat your air fryer to 400°F (200°C).
- Arrange the cauliflower in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.
- While the cauliflower is cooking, prepare the buffalo sauce. In a small bowl, whisk together the hot sauce, melted butter, white vinegar, and garlic powder until combined.
- Once the cauliflower is cooked, transfer it to a clean large bowl. Pour the buffalo sauce over the cauliflower and toss gently to coat evenly.
- Serve immediately.

Notes
For an extra kick, add a pinch of cayenne pepper to the dry coating mixture. Serve with blue cheese dressing or ranch dressing for dipping.
