Ingredients

For the Peppers
  • 4 Bell Peppers Any color, tops cut off and seeded
For the Filling
  • 1 lb Ground Beef
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 cup Cooked Rice
  • 1/2 cup Tomato Sauce
  • 1 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
For Topping
  • 1/2 cup Shredded Cheese Cheddar or Mozzarella

Equipment

  • Air fryer
  • Large skillet
  • Cutting board
  • Knife

Method

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large skillet over medium-high heat, brown the ground beef. Drain off any excess fat.
  3. Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is softened, about 5 minutes.
  4. Stir in the cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Mix well to combine.
  5. Stuff the mixture evenly into the prepared bell peppers.
  6. Place the stuffed peppers in the air fryer basket. You may need to cook in batches depending on the size of your air fryer.
  7. Air fry for 15-20 minutes, or until the peppers are tender and the filling is heated through.
  8. Top the stuffed peppers with shredded cheese during the last 2-3 minutes of cooking, allowing it to melt.
  9. Carefully remove from the air fryer and serve hot.

Notes

You can substitute ground turkey or chicken for the ground beef. For a vegetarian option, use lentils or a plant-based ground substitute.
