For the Oatmeal
  • 2 cups rolled oats
  • 1/2 cup chopped pecans optional
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk any kind
  • 1/4 cup maple syrup
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 large apple peeled, cored, and diced

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 8x8 inch baking dish.
  2. In a large bowl, combine the rolled oats, chopped pecans (if using), baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apple.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown.
  7. Let cool for about 10 minutes before serving.
