Ingredients
  

Pancakes
  • 1 cup rolled oats ground into flour
  • 1 ripe banana mashed
  • 2 large eggs
  • 1/2 cup milk or dairy-free alternative
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp maple syrup optional, for sweetness

Method
 

  1. In a bowl, combine the ground oats, mashed banana, eggs, milk, baking powder, salt, and optional maple syrup.
  2. Whisk the ingredients together until well combined. The batter will be thick.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve warm with your favorite toppings.

Notes

You can add a pinch of cinnamon or vanilla extract to the batter for extra flavor. Toppings can include fresh fruit, yogurt, or more maple syrup.
