Berry French Toast Bake

A simple and delicious French toast bake perfect for weekend brunch.

Ingredients
  

For the French Toast Bake
  • 8 slices Bread stale or lightly toasted bread, cut into 1-inch cubes
  • 4 Large eggs
  • 2 cups Milk whole milk recommended
  • 1/4 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1.5 cups Mixed berries fresh or frozen
Optional Toppings
  • Powdered sugar for dusting
  • Maple syrup
  • Whipped cream

Equipment

  • 9x13-inch baking dish
  • Whisk
  • Large bowl

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Spread the cubed bread evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes in the baking dish.
  5. Scatter the mixed berries over the top of the bread mixture.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for another 15-20 minutes, or until the French toast bake is golden brown and set in the center.
  8. Let it cool for about 10 minutes before serving. Dust with powdered sugar and serve with maple syrup and whipped cream, if desired.

Notes

For a richer flavor, you can use a combination of milk and heavy cream. If using frozen berries, do not thaw them before adding to the bake.
