Bruschetta Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Bruschetta Topping
  • 2 cups diced tomatoes about 2 medium tomatoes
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic minced
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish. Drizzle with 1 tablespoon of olive oil, then season with salt and pepper.
  3. Bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. While the chicken bakes, prepare the topping. In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic glaze, and 1 tablespoon of olive oil. Stir to combine.
  5. Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
  6. Serve immediately.

Notes

You can serve this with a side of pasta or a fresh green salad.
