Chicken Avocado Melt Sandwich

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts slice each crosswise to create 4 thinner breasts
  • 1 tbsp olive oil
  • salt to taste
  • pepper to taste
For the Chipotle Mayonnaise
  • 1 cup mayonnaise
  • 2 chipotle chili peppers in adobo sauce finely diced
  • 1/2 tsp lime juice
  • salt to taste
  • pepper to taste
For the Sandwich Assembly
  • 1 loaf unsliced Italian or other white bread slice into 8 thick slices (about 1/2 inch)
  • 2 avocados peeled, pitted, and sliced
  • 2 cups sharp cheddar cheese grated
  • 8 slices American cheese
  • butter or mayonnaise for grilling

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Slice each chicken breast crosswise to create two thinner cutlets, resulting in four thin chicken breasts. Place the chicken in a glass baking dish, season with salt and pepper, and drizzle with olive oil. Roast for 20-25 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C).
  2. While the chicken is roasting, dice the chipotle peppers. In a small bowl, combine the mayonnaise, lime juice, and diced chipotle peppers. Season with salt and pepper to your liking. Set this chipotle mayonnaise aside.
  3. Heat a griddle or skillet over medium heat. Slice the bread into 8 thick slices, about 1/2 inch thick. Spread one side of each bread slice with softened butter or mayonnaise.
  4. Assemble the sandwiches. Spread the chipotle mayonnaise onto the unbuttered side of four bread slices. Layer with grated cheddar cheese, sliced avocados, the cooked chicken, and two slices of American cheese. Top with the remaining bread slices, buttered side up. Grill the sandwiches for 3-4 minutes per side, until golden brown and the cheese is melted.

Notes

This sandwich is a versatile meal. You can adjust the spice level by adding more or fewer chipotle peppers. For a healthier option, consider using whole-grain bread and a light mayonnaise. The chicken can be grilled or pan-fried instead of roasted if you prefer.
