Chicken Bacon Ranch Penne

Ingredients
  

For the Pasta
  • 1 pound penne pasta
For the Chicken and Bacon
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 6 slices bacon cooked and crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Ranch Sauce
  • 1 cup heavy cream
  • 1/2 cup ranch dressing
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced

Equipment

  • Large pot
  • Skillet
  • Colander

Method
 

  1. Cook the penne pasta according to package directions. Drain and set aside.
  2. While the pasta is cooking, season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Pour in the heavy cream and ranch dressing. Bring to a simmer, then reduce heat and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  4. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Return the cooked chicken to the skillet. Add the cooked pasta and crumbled bacon. Toss everything together until well combined and heated through.
  5. Serve immediately.

Notes

You can add chopped fresh parsley for garnish if desired.
