Ingredients

For the Filling
  • 1 lb Ground beef
  • 1/2 cup Water
  • 2 tbsp Taco seasoning Store-bought or homemade
  • 2 cups Cooked seasoned rice e.g., Near East Spanish Rice
  • 1.5 cups Shredded cheese blend Cheddar, Monterey Jack, and Mozzarella
  • 1/2 cup Nacho cheese sauce Warmed slightly
  • 1/4 cup Chipotle sauce
  • 1/4 cup Sour cream
  • 1/2 cup Tortilla strips Crushed
For Assembly
  • 1 tbsp Unsalted butter
  • 4 Flour tortillas Burrito-size (10-12 inch)

Equipment

  • Large skillet
  • Spatula
  • Measuring cups and spoons

Method

  1. In a large skillet over medium-high heat, cook the ground beef until browned. Drain off any excess grease.
  2. Stir in the water and taco seasoning. Cook for 2-3 minutes, or until the liquid has mostly evaporated.
  3. Add the cooked seasoned rice and shredded cheese to the skillet. Stir until the cheese is melted and everything is well combined. Remove from heat.
  4. Lay out one flour tortilla. Spread a layer of nacho cheese sauce down the center, leaving a border. Top with the beef and rice mixture.
  5. Drizzle with chipotle sauce and sour cream. Sprinkle the crushed tortilla strips over the sauces.
  6. Fold in the sides of the tortilla, then fold the bottom edge up and over the filling. Continue to roll tightly to form a wrap.
  7. Melt the butter in the same skillet over medium heat. Place the wrap seam-side down in the skillet and cook for 3-5 minutes, until golden brown and crispy.
  8. Flip the wrap and cook the other side for another 3-5 minutes. Remove from skillet and let rest for 5 minutes before slicing in half and serving.
