- Heat sesame oil in a large skillet over medium-high heat.
- Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in minced garlic and grated ginger, and cook for 1 minute until fragrant.
- In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour the sauce over the chicken.
- Add chopped water chestnuts and chopped scallions to the skillet. Stir to combine and cook for 2-3 minutes, until heated through.
- Spoon the chicken mixture into the prepared lettuce leaves.
Notes
For extra crunch, you can add shredded carrots or bell peppers to the filling. Serve immediately for the best crispness.
