Ingredients
  

For the Filling
  • 1 pound ground chicken
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1/4 cup soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1/2 cup water chestnuts chopped
  • 1/4 cup scallions chopped
For Serving
  • 8 large lettuce leaves such as butter or iceberg lettuce

Equipment

  • Large skillet
  • Cutting board
  • Knife

Method
 

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in minced garlic and grated ginger, and cook for 1 minute until fragrant.
  4. In a small bowl, whisk together soy sauce, rice vinegar, and honey. Pour the sauce over the chicken.
  5. Add chopped water chestnuts and chopped scallions to the skillet. Stir to combine and cook for 2-3 minutes, until heated through.
  6. Spoon the chicken mixture into the prepared lettuce leaves.

Notes

For extra crunch, you can add shredded carrots or bell peppers to the filling. Serve immediately for the best crispness.
