Cozy Slow Cooker Chicken and Dumplings

Ingredients
  

For the Chicken Stew
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1/4 cup cold water
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted butter

Equipment

Method
 

  1. Place chicken, carrots, celery, onion, chicken broth, thyme, salt, and pepper in your slow cooker. Stir to combine.
  2. Cover and cook on low for 4 hours or on high for 2 hours, until chicken is cooked through.
  3. In a small bowl, whisk together the 1/2 cup flour and 1/4 cup cold water until smooth. Pour this mixture into the slow cooker and stir to combine.
  4. In a separate medium bowl, whisk together the 2 cups flour, baking powder, and 1 teaspoon salt.
  5. Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the dumpling batter onto the surface of the simmering stew. Cover the slow cooker and cook for another 30 minutes, or until the dumplings are cooked through and fluffy.
  7. Serve hot.

Notes

You can shred the chicken before adding the dumplings if you prefer a different texture.
