Method
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Melt butter in the same skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
- Stir in Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Cook until the sauce thickens slightly, about 3-5 minutes.
- Add spinach to the skillet and cook until wilted, about 1-2 minutes.
- Return the cooked chicken to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes.
