Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
For the Sauce
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Melt butter in the same skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  5. Stir in Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Cook until the sauce thickens slightly, about 3-5 minutes.
  6. Add spinach to the skillet and cook until wilted, about 1-2 minutes.
  7. Return the cooked chicken to the skillet and toss to coat in the sauce. Heat through for 1-2 minutes.

Notes

Serve immediately. This dish pairs well with pasta, rice, or crusty bread.
