- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the chicken pieces, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly.
- Spread the coated chicken in a single layer on the prepared baking sheet.
- Bake for 18-20 minutes, or until the chicken is cooked through and slightly caramelized. You can broil for the last 1-2 minutes for extra color, watching carefully to prevent burning.
- Assemble your bowls by dividing the cooked rice or quinoa among four bowls. Top with the BBQ chicken, corn, black beans, red onion, and cilantro.
- Drizzle with extra BBQ sauce if desired. Serve immediately.
