Easy BBQ Chicken Bowls

Ingredients
  

For the Chicken
  • 1.5 lbs Boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for serving
  • 1 tsp Smoked paprika
  • 1/2 tsp Garlic powder
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
For the Bowls
  • 2 cups Cooked rice or quinoa
  • 1 cup Corn canned or frozen
  • 1 cup Black beans rinsed and drained
  • 1/2 cup Red onion thinly sliced
  • 1/4 cup Cilantro chopped

Equipment

  • Baking sheet
  • Large bowl
  • Small bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the chicken pieces, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly.
  3. Spread the coated chicken in a single layer on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the chicken is cooked through and slightly caramelized. You can broil for the last 1-2 minutes for extra color, watching carefully to prevent burning.
  5. Assemble your bowls by dividing the cooked rice or quinoa among four bowls. Top with the BBQ chicken, corn, black beans, red onion, and cilantro.
  6. Drizzle with extra BBQ sauce if desired. Serve immediately.

Notes

Feel free to customize your bowls with other favorite toppings such as avocado, shredded cheese, or a dollop of sour cream.
