- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the undrained diced tomatoes, rinsed black beans, drained corn, taco seasoning, and water to the skillet. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally.
- Uncover and stir in the shredded cheddar cheese until melted.
- Serve hot with your favorite toppings.
Notes
