Easy Beef Taco Skillet

Ingredients
  

For the Taco Skillet
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 can corn 15 ounce, drained
  • 1 packet taco seasoning 1 ounce
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
Optional Toppings
  • sour cream
  • salsa
  • chopped cilantro
  • avocado diced

Method
 

  1. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the undrained diced tomatoes, rinsed black beans, drained corn, taco seasoning, and water to the skillet. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally.
  6. Uncover and stir in the shredded cheddar cheese until melted.
  7. Serve hot with your favorite toppings.

Notes

This taco skillet is versatile. Feel free to add other vegetables like bell peppers or jalapeños. Serve with tortilla chips or over rice for a complete meal.
