Easy Honey Garlic Salmon and Broccoli

This recipe makes a simple and delicious honey garlic salmon with roasted broccoli. It's a quick weeknight meal.

Ingredients
  

For the Salmon and Broccoli
  • 1 lb salmon fillet skin on or off
  • 1 lb broccoli florets
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Honey Garlic Sauce
  • 1/4 cup honey
  • 3 tbsp soy sauce low sodium recommended
  • 2 cloves garlic minced
  • 1 tbsp sesame oil
  • 1 tsp cornstarch optional, for thickening

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the honey, soy sauce, minced garlic, sesame oil, and cornstarch (if using) for the sauce. Set aside.
  3. Place the broccoli florets on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Toss to coat.
  4. Pat the salmon fillet dry with paper towels. Place it on the other side of the baking sheet. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper.
  5. Bake for 10 minutes.
  6. Remove the baking sheet from the oven. Pour the honey garlic sauce over the salmon, ensuring it is evenly coated.
  7. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp.
  8. Serve immediately.

Notes

You can add a sprinkle of sesame seeds or chopped green onions as a garnish before serving.
