Pancake Batter
  • 1 1/4 cups all-purpose flour
  • 1 Tbsp. sugar
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. kosher salt
  • 1 cup milk
  • 1 large egg
  • 1 Tbsp. canola oil or unsalted butter, melted and cooled

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Make a well in the center.
  2. In a medium bowl or liquid measuring cup, whisk together the milk, egg, and oil until smooth. Pour this mixture into the well in the flour mixture and slowly whisk to combine. Using a rubber spatula, stir until mostly smooth; some small lumps are okay.
  3. Heat a large nonstick skillet or griddle on medium heat until a drop of water sizzles. In batches, add scant 1/4-cupfuls of batter to the skillet and cook until the surface is bubbly and the edges are set, about 2 to 3 minutes. With a wide spatula, gently flip and cook until the underside is golden brown, 1 to 2 minutes more. Repeat with the remaining batter. Serve right away or keep warm on a baking sheet in a 225°F oven.
