Method
- Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the chopped artichoke hearts, heavy cream, Parmesan cheese, and red pepper flakes (if using). Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
- Add the fresh spinach to the skillet and stir until it wilts, about 1-2 minutes.
- Add the cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Season with salt and black pepper to taste. Serve immediately.
Notes
You can add cooked chicken or shrimp for extra protein. Feel free to adjust the amount of red pepper flakes to your spice preference.
