Easy Spinach Artichoke Pasta

A quick and delicious pasta dish featuring creamy spinach and artichoke flavors. Perfect for a weeknight dinner.

Ingredients
  

Pasta
  • 12 ounces Pasta such as penne, rotini, or farfalle
Sauce
  • 1 tablespoon Olive oil
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 can (14 ounces) Artichoke hearts drained and chopped
  • 5 ounces Fresh spinach
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 1/4 teaspoon Red pepper flakes optional
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

  • Large pot
  • Colander
  • Large skillet

Method
 

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the chopped artichoke hearts, heavy cream, Parmesan cheese, and red pepper flakes (if using). Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Add the fresh spinach to the skillet and stir until it wilts, about 1-2 minutes.
  6. Add the cooked pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  7. Season with salt and black pepper to taste. Serve immediately.

Notes

You can add cooked chicken or shrimp for extra protein. Feel free to adjust the amount of red pepper flakes to your spice preference.
