Method
- Preheat your oven to 350°F (175°C). Grease and flour a 12-inch pizza pan or line a large baking sheet with parchment paper.
- Press the sugar cookie dough evenly onto the prepared pan to form a large circle. Bake for 12-15 minutes, or until golden brown around the edges. Let the cookie crust cool completely on the pan.
- While the crust cools, prepare the frosting. In a large bowl, beat the softened cream cheese and butter together with an electric mixer until smooth. Beat in the vanilla extract.
- Gradually add the powdered sugar, beating until the frosting is light and fluffy. If the frosting is too thick, you can add a tablespoon of milk or cream.
- Spread the cream cheese frosting evenly over the cooled cookie crust, leaving a small border.
- Arrange the fruit on top of the frosting to create the flag design. Use blueberries for the blue field in the corner. Arrange sliced strawberries and raspberries in stripes for the rest of the flag.
- Chill the fruit pizza for at least 30 minutes before slicing and serving. This helps the frosting set.
Notes
You can use other berries like blackberries or use different cookie doughs. Ensure all fruit is washed and dried before decorating.
