Method
- Preheat your oven to 375°F (190°C).
- Cut each tortilla into 8 wedges. Arrange the wedges in a single layer on a baking sheet.
- In a small bowl, mix together the melted butter, sugar, and cinnamon.
- Brush the cinnamon-sugar mixture evenly over the tortilla wedges.
- Bake for 8-10 minutes, or until golden brown and crisp. Let cool completely.
- While the chips are baking, prepare the salsa. In a large bowl, combine the chopped peaches, red onion, cilantro, jalapeno (if using), lime juice, and salt.
- Gently stir to combine all ingredients.
- Serve the peach salsa with the cooled cinnamon chips.
Notes
You can adjust the amount of jalapeno to control the spice level. If fresh peaches are not in season, you can use frozen peaches that have been thawed and drained.
