- Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Mix well and set aside.
- Season your steaks generously on both sides with salt, pepper, and garlic powder.
- Place an oven-safe skillet over medium-high heat. Add the olive oil. Once the oil is shimmering, carefully place the seasoned steaks in the skillet. Sear for 2-3 minutes on each side until nicely browned. Remove the steaks from the skillet and set them aside on a plate.
- Add the diced baby potatoes to the same skillet. Season them with salt, pepper, and garlic powder. Sauté the potatoes for 3-5 minutes until they begin to brown. Push the potatoes to one side of the skillet and return the seared steaks to the other side.
- Transfer the skillet to the preheated oven. Cook for 15-20 minutes, or until the potatoes are fork-tender and the steak is cooked to your desired doneness.
- Once removed from the oven, place a dollop of the prepared garlic butter mixture on top of each steak. Distribute the remaining garlic butter over the potatoes. Allow the butter to melt for a minute, then stir the potatoes to coat them evenly. Sprinkle with fresh thyme and parsley before serving.

Notes
Any oven-safe skillet will work, but a cast-iron pan is recommended for achieving a great sear on your steak. You can use various cuts of beef for this recipe; choose steaks that are about 1 inch thick and small enough to fit comfortably in a 12-inch skillet alongside the potatoes.
