For the Meatloaf
  • 1.5 pounds ground chicken
  • 3/4 cup Italian breadcrumbs or plain
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup minced yellow onion
  • 4 cloves minced garlic
  • 1 large egg
  • 1/4 cup whole milk
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Topping
  • 1/2 cup shredded parmesan cheese
  • 1 tablespoon fresh chopped parsley

Method
 

  1. Preheat your oven to 350°F. Spray a 9x5x2-inch loaf pan with nonstick cooking spray.
  2. In a large mixing bowl, combine ground chicken, Italian breadcrumbs, grated Parmesan cheese, minced yellow onion, minced garlic, egg, whole milk, chopped parsley, salt, and black pepper.
  3. Mix the ingredients until well combined. You can use clean hands or a large spoon.
  4. Form the meat mixture into a loaf and place it in the prepared loaf pan. Top with the shredded Parmesan cheese and the remaining fresh chopped parsley.
  5. Bake in the preheated oven for 1 hour. For a golden brown top, broil for the last 2 minutes, watching closely.
