Ingredients
  

For the Chicken and Potatoes
  • 1.5 lbs chicken breast cut into 1-inch pieces
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the chicken pieces and potato cubes.
  3. Add the olive oil, ranch seasoning mix, garlic powder, and black pepper to the bowl. Toss everything together until the chicken and potatoes are evenly coated.
  4. Spread the coated chicken and potatoes in a single layer on the prepared baking sheet.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown, flipping halfway through.
  6. Serve hot.

Notes

For crispier potatoes, you can soak them in cold water for 30 minutes before cubing and drying them thoroughly. You can also add other vegetables like broccoli florets or bell pepper chunks during the last 15 minutes of baking.
