For the Steak
  • 2 lbs steak of choice Season with salt, pepper, and garlic
For the Tortellini
  • 24 oz fresh tortellini
  • 8 oz butter
  • minced garlic
  • 2 tsp garlic powder
  • 1.5 tsp smoked paprika
  • 1 tsp black pepper
  • 0.5 tsp red pepper flakes
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • zest from small lemon
  • 0.5 juice from lemon
  • 1 tbsp dijon mustard
Optional Toppings
  • Grated Parmesan
  • Parsley

Method
 

  1. Season your steak with salt, pepper, and garlic. Cook the steak to your desired temperature on the RecTeq Dual Fire Pellet Grill, then set it aside to rest.
  2. In a large saute pan, melt the butter over medium-low heat.
  3. Once the butter is melted, add the minced garlic and stir until it becomes fragrant.
  4. Stir in the garlic powder, smoked paprika, black pepper, and red pepper flakes. Then, add the chicken broth and heavy cream.
  5. Add the lemon zest, lemon juice, and dijon mustard. Stir everything together until well combined.
  6. Add the fresh tortellini to the sauce and bring the mixture to a simmer.
  7. Cover the pan and let the tortellini plump up for about 10 minutes, stirring every few minutes to prevent sticking.
  8. While the tortellini is plumping, cut the rested steak into bite-sized chunks.
  9. Add the steak chunks to the tortellini and stir until everything is well coated in the sauce. Serve immediately, topping with grated Parmesan and parsley if desired.
