- Spread 3 tablespoons butter on 1 side of the bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes. Remove the bread from the skillet.
- In a small bowl, mix together the mayonnaise, Manchego cheese, and onion powder. In another bowl, combine the shredded cheddar, Monterey Jack, and Gruyere cheeses.
- To assemble the sandwiches, place 4 slices of the toasted bread with the toasted side up. Top each slice with the sliced Brie cheese. Sprinkle the shredded cheddar cheese mixture evenly over the Brie.
- Top with the remaining 4 slices of toasted bread, with the toasted side facing inward. Spread the mayonnaise mixture on the outsides of each sandwich.
- Place the assembled sandwiches in the same skillet. Cook until the bread is golden brown and the cheese is melted, about 5-6 minutes on each side.
- Serve immediately.
