Grilled Chicken Cobb Bowls

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts Chicken breasts
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the Salad
  • 4 cups Romaine lettuce chopped
  • 2 large Eggs hard-boiled and chopped
  • 4 strips Bacon cooked and crumbled
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Avocado diced
  • 1/4 cup Blue cheese crumbled
For the Dressing
  • 1/4 cup Ranch dressing

Equipment

  • Grill
  • Large bowl
  • Knife
  • Cutting board

Method
 

  1. Preheat your grill to medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
  4. In a large bowl, combine chopped romaine lettuce, hard-boiled eggs, crumbled bacon, cherry tomatoes, diced avocado, and crumbled blue cheese.
  5. Top the salad with sliced grilled chicken.
  6. Drizzle with ranch dressing and serve immediately.

Notes

You can substitute your favorite dressing for ranch. Other additions like corn or red onion are also great.
