Method
- Preheat your grill to medium-high heat. Lightly oil the grill grates.
- Brush the cut sides of the peaches with a little olive oil. Grill the peaches, cut side down, for 3-5 minutes per side, until slightly softened and grill marks appear.
- Remove the peaches from the grill and let them cool for about 5 minutes. Once slightly cooled, slice them into wedges.
- In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper for the dressing.
- In a large bowl, combine the arugula, grilled peach wedges, crumbled goat cheese, and toasted pecans (if using).
- Drizzle the honey-lime dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
You can substitute other soft cheeses like feta or burrata for goat cheese. If you don't have a grill, you can pan-sear the peaches in a lightly oiled skillet.
