Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 ripe peaches halved and pitted
  • 5 oz arugula or mixed greens
  • 4 oz goat cheese crumbled
  • 1/4 cup pecans toasted, optional
For the Honey-Lime Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper freshly ground

  • Small bowl
  • Whisk
  • Large bowl

Method
 

  1. Preheat your grill to medium-high heat. Lightly oil the grill grates.
  2. Brush the cut sides of the peaches with a little olive oil. Grill the peaches, cut side down, for 3-5 minutes per side, until slightly softened and grill marks appear.
  3. Remove the peaches from the grill and let them cool for about 5 minutes. Once slightly cooled, slice them into wedges.
  4. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper for the dressing.
  5. In a large bowl, combine the arugula, grilled peach wedges, crumbled goat cheese, and toasted pecans (if using).
  6. Drizzle the honey-lime dressing over the salad and toss gently to combine.
  7. Serve immediately.

Notes

You can substitute other soft cheeses like feta or burrata for goat cheese. If you don't have a grill, you can pan-sear the peaches in a lightly oiled skillet.
