Grilled Watermelon Skewers with Halloumi Cheese

Ingredients
  

For the Skewers
  • 1/2 medium Watermelon seeded, cut into 1-inch cubes
  • 8 oz Halloumi cheese cut into 1-inch cubes
  • 2 tbsp Olive oil
  • 1/4 cup Fresh mint leaves chopped
  • 1 tbsp Balsamic glaze for drizzling

Equipment

  • Skewers
  • Knife
  • Cutting board

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  3. Brush the skewers with olive oil.
  4. Grill the skewers for 3-4 minutes per side, until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
  5. Remove from grill, sprinkle with fresh mint, and drizzle with balsamic glaze.

Notes

Serve immediately as a light appetizer or side dish.
