  • 4.5 cups sweet potatoes cubed (about 1 1/2 pounds)
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 teaspoon cinnamon
For the Beef
  • 1 pound lean ground beef
  • 1 Tablespoon tomato paste
  • 1 Tablespoon taco seasoning
For Assembly
  • 2 cups low-fat cottage cheese
  • 1 large avocado (or 2 small)
  • 4 Tablespoons hot honey

Method
 

  1. Preheat your oven to 425 degrees F.

  4. While the sweet potatoes roast, cook the ground beef in a large skillet over medium-high heat with the taco seasoning and tomato paste.
  5. Assemble each bowl with the roasted sweet potatoes, cooked ground beef, cottage cheese, avocado slices, and a drizzle of hot honey.
