Ground Beef Stuffed Bell Peppers

These ground beef stuffed bell peppers are a flavorful and satisfying meal. They are easy to make and perfect for a weeknight dinner.

Ingredients
  

For the Peppers
  • 4 bell peppers any color, tops removed, seeds and membranes removed
For the Filling
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup cooked rice
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Skillet

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened, about 5 minutes.
  4. Stir in the cooked rice, diced tomatoes (with their juice), salt, and pepper. Mix well.
  5. Spoon the ground beef mixture evenly into the prepared bell pepper halves.
  6. Place the stuffed bell peppers in a baking dish. Add about 1/2 inch of water to the bottom of the baking dish.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. Remove the foil, sprinkle the shredded cheese over the top of the peppers, and bake for another 15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

You can add other seasonings like chili powder or Italian seasoning to the filling for extra flavor. Serve hot.
