Ingredients
  

For the Soup
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots chopped
  • 1 cup celery chopped
  • 1 can (28 ounce) diced tomatoes undrained
  • 4 cups beef broth
  • 1 cup potatoes diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain off any excess grease.
  2. Add the chopped onion, minced garlic, chopped carrots, and chopped celery to the pot. Cook until the vegetables begin to soften, about 5-7 minutes.
  3. Stir in the diced tomatoes (with their juice), beef broth, diced potatoes, dried thyme, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for at least 20 minutes, or until the potatoes are tender.
  5. Taste and adjust seasonings if needed before serving.
