Method
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Place the cottage cheese in a food processor and blend until it is completely smooth.
- In a mixing bowl, combine the flour, baking powder, and salt. Add the blended cottage cheese and fold it in. Knead the dough until all ingredients are well combined.
- Lightly flour a cutting board. Place the dough on the floured board and roll it out into a rectangle shape, approximately ½ inch thick.
- In a separate small bowl, mix together the filling ingredients (coconut sugar, melted butter or coconut oil, and cinnamon) until a paste forms. Spread this filling evenly over the dough rectangle.
- Starting with one of the shorter sides, slowly roll the dough into a cylinder shape. Use a wet knife or a piece of string to cut the dough into 6 to 7 rolls. For a better result, aim for 6 rolls.
- Arrange the rolls in a baking dish lined with parchment paper. Bake for 30 to 40 minutes, or until the rolls are golden brown.
- While the rolls are baking, prepare the icing. In a bowl, mix together the cream cheese, powdered sugar (or monk fruit sweetener), and milk until smooth.
- Remove the rolls from the oven and allow them to cool slightly. Drizzle the prepared icing over the warm rolls and enjoy.
