  • 2 cups Old fashioned oats
  • 1 1/2 teaspoons Baking powder
  • 1/2 teaspoon Salt
  • 1 1/2 cups Milk Unsweetened vanilla almond milk preferred, but any milk works.
  • 1/4 cup Maple syrup
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups Mixed berries Blueberries, blackberries, and cut strawberries.

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease a medium baking dish and set it aside.
  2. In a medium bowl, combine the oats, baking powder, and salt. Add the milk, maple syrup, egg, and vanilla extract. Stir until well combined. Fold in the mixed berries.
  3. Pour the mixture into the prepared baking dish. Bake in the preheated oven for 20 minutes.
