Ingredients
  

For the Salad
  • 1 can black beans rinsed and drained
  • 1 mango peeled and diced
  • 1 red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
For the Dressing
  • 1/4 cup olive oil
  • 3 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the rinsed and drained black beans, diced mango, diced red bell pepper, chopped red onion, and chopped cilantro.
  2. In a small bowl, whisk together the olive oil, fresh lime juice, cumin, salt, and black pepper until well combined.
  3. Pour the dressing over the salad ingredients in the large bowl.
  4. Gently toss all the ingredients together until everything is evenly coated with the dressing.
  5. For best flavor, let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

This salad can be made ahead of time and stored in the refrigerator. It is best served chilled.
