Mediterranean Pasta Salad Jars

Ingredients
  

For the Pasta Salad
  • 8 ounces Rotini pasta or other short pasta shape
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Red onion finely chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Feta cheese crumbled
  • 1/4 cup Fresh parsley chopped
For the Dressing
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder
  • Salt to taste Salt
  • Black pepper to taste Black pepper

Equipment

  • Large pot
  • Colander
  • Large bowl
  • Mason jars

Method
 

  1. Cook the pasta according to package directions. Drain and rinse with cold water. Transfer to a large bowl.
  2. Add the halved cherry tomatoes, diced cucumber, chopped red onion, halved Kalamata olives, crumbled feta cheese, and chopped parsley to the bowl with the pasta.
  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper for the dressing.
  4. Pour the dressing over the pasta salad and toss gently to combine.
  5. Divide the pasta salad evenly among four mason jars. Seal the jars tightly.
  6. Refrigerate until ready to serve. Shake the jar well before eating.

Notes

You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
