Mongolian Ground Beef Noodles

Ingredients
  

For the Noodles and Beef
  • 8 oz Noodles such as spaghetti, linguine, or ramen
  • 1 lb Ground beef 80/20 or 90/10 recommended
  • 1 tbsp Vegetable oil
For the Sauce
  • 1/2 cup Soy sauce
  • 1/4 cup Beef broth
  • 1/4 cup Brown sugar
  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 2 cloves Garlic minced
  • 1 tsp Ginger grated or minced
  • 1 tbsp Cornstarch mixed with 2 tbsp water to make a slurry
Optional Garnishes
  • 1/4 cup Green onions sliced
  • 1 tbsp Sesame seeds

Equipment

  • Large skillet
  • Pot for noodles

Method
 

  1. Cook the noodles according to package directions. Drain and set aside.
  2. While the noodles cook, prepare the sauce. In a small bowl, whisk together soy sauce, beef broth, brown sugar, oyster sauce, and sesame oil. Set aside.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Add the minced garlic and grated ginger to the skillet with the beef. Cook for about 1 minute until fragrant.
  5. Pour the prepared sauce mixture into the skillet. Bring to a simmer.
  6. Stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  7. Add the cooked noodles to the skillet with the beef and sauce. Toss to coat everything evenly.
  8. Serve immediately, garnished with sliced green onions and sesame seeds, if desired.

Notes

You can adjust the sweetness and saltiness of the sauce to your preference by adding more or less brown sugar and soy sauce. For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
