  • 1/4 cup pure maple syrup
  • 1 Tbsp. chia seeds
  • 1/2 tsp. pure vanilla extract
  • 1 pinch Kosher salt
  • 1 cup old-fashioned oats, toasted
  • 1/2 cup bittersweet chocolate chips

Method
 

  1. In a medium bowl, stir together almond butter, maple syrup, chia seeds, vanilla extract, and a pinch of salt. Fold in the toasted oats, then the chocolate chips. Refrigerate the mixture for 30 minutes.
  2. Shape the mixture into 1-inch balls, using about 1 heaping tablespoon for each ball. Store the balls in an airtight container for up to 2 weeks, or freeze them for up to 3 months.
