One Pan Lemon Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sauce
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice freshly squeezed
  • 1 tbsp honey
  • 1 clove garlic minced
For Garnish
  • 2 tbsp fresh parsley chopped
  • 1/2 lemon sliced, for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
  3. In a small bowl, whisk together the chicken broth, lemon juice, honey, and minced garlic.
  4. Place the seasoned chicken in a single layer in the oven-safe skillet.
  5. Pour the lemon-garlic sauce over the chicken.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Garnish with fresh parsley and serve with lemon slices.
