One Pot Taco Pasta

A quick and easy one-pot taco pasta recipe perfect for weeknight dinners.

Ingredients
  

For the Pasta
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon taco seasoning
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 4 cups beef broth
  • 12 ounces penne pasta
  • 1 cup shredded cheddar cheese

  • sour cream
  • chopped cilantro
  • diced avocado

  • Large pot or Dutch oven
  • Knife
  • Cutting board

Method
 

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and taco seasoning and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their juice) and beef broth. Bring the mixture to a boil.
  4. Stir in the penne pasta. Reduce the heat to medium-low, cover, and simmer for 15-20 minutes, or until the pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  6. Serve hot, with your favorite taco toppings.

Notes

You can adjust the amount of taco seasoning to your preference. For a spicier dish, add a pinch of cayenne pepper or some diced jalapeños with the onions.
