Peach Brown Sugar Cobbler

Ingredients
  

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 3/4 cup packed brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
For the Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/2 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced peaches, brown sugar, 1/4 cup flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches evenly.
  3. Pour the peach mixture into the prepared baking dish.
  4. In a separate medium bowl, whisk together 1 cup flour, granulated sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir until just combined. Do not overmix.
  7. Spoon the topping evenly over the peach mixture in the baking dish.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the cobbler cool slightly before serving. Serve warm, perhaps with a scoop of vanilla ice cream.

Notes

You can use canned peaches if fresh are not available, but drain them well. Adjust sugar based on the sweetness of your peaches.
