Peach Crisp Overnight Oats

Ingredients
  

For the Oats
  • 1/2 cup Rolled oats
  • 1/2 cup Milk dairy or non-dairy
  • 1/4 cup Greek yogurt
  • 1 tbsp Maple syrup or to taste
  • 1/4 tsp Cinnamon
  • 1/8 tsp Nutmeg
For the Peaches
  • 1/2 cup Chopped peaches fresh or frozen
  • 1 tsp Lemon juice
For the Crisp Topping
  • 1 tbsp Rolled oats
  • 1 tsp Chopped pecans optional
  • 1/2 tsp Butter melted

Method
 

  1. In a jar or container, combine 1/2 cup rolled oats, 1/2 cup milk, 1/4 cup Greek yogurt, 1 tbsp maple syrup, 1/4 tsp cinnamon, and 1/8 tsp nutmeg. Stir well.
  2. Add 1/2 cup chopped peaches and 1 tsp lemon juice to the oat mixture. Stir gently.
  3. In a small bowl, mix 1 tbsp rolled oats, 1 tsp chopped pecans (if using), and 1/2 tsp melted butter for the crisp topping. Sprinkle this over the oat mixture.
  4. Cover the jar and refrigerate for at least 8 hours, or overnight.
  5. Stir before serving. Enjoy your peach crisp overnight oats.

Notes

You can adjust the sweetness to your preference. If using frozen peaches, thaw them slightly before using.
