Method
- Cook the orzo according to package directions in boiling salted water. Drain and set aside.
- While the orzo cooks, prepare the pesto. Combine basil, Parmesan cheese, pine nuts, and garlic in a food processor. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the pesto is smooth. Season with salt and pepper.
- In a large skillet, combine the cooked orzo and the pesto sauce. Toss to coat evenly.
- Heat gently over low heat for 2-3 minutes, or until warmed through. Serve immediately.
Notes
You can add cooked chicken, shrimp, or vegetables to make this a more complete meal.
