Pesto Orzo

Ingredients
  

For the Orzo
  • 1 pound orzo pasta
  • 4 cups water
  • 1 teaspoon salt
For the Pesto Sauce
  • 1 cup fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Equipment

  • Large pot
  • Colander
  • Large skillet

Method
 

  1. Cook the orzo according to package directions in boiling salted water. Drain and set aside.
  2. While the orzo cooks, prepare the pesto. Combine basil, Parmesan cheese, pine nuts, and garlic in a food processor. Pulse until finely chopped.
  3. With the food processor running, slowly drizzle in the olive oil until the pesto is smooth. Season with salt and pepper.
  4. In a large skillet, combine the cooked orzo and the pesto sauce. Toss to coat evenly.
  5. Heat gently over low heat for 2-3 minutes, or until warmed through. Serve immediately.

Notes

You can add cooked chicken, shrimp, or vegetables to make this a more complete meal.
