Quick Cajun Chicken Alfredo

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts chicken breasts cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning plus more to taste
  • 1 tablespoon olive oil
For the Alfredo Sauce
  • 8 ounces fettuccine pasta
  • 4 tablespoons butter
  • 2 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 teaspoon salt or to taste

Method
 

  1. Cook fettuccine according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta cooks, season chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not let it burn.
  4. Pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until sauce begins to thicken slightly.
  5. Reduce heat to low. Gradually stir in grated Parmesan cheese until melted and the sauce is smooth. Season with black pepper and salt to taste.
  6. Add the cooked fettuccine and cooked chicken back into the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Serve immediately.

Notes

For extra spice, add a pinch of cayenne pepper to the sauce. You can also add cooked shrimp or sausage for a heartier meal.
