- Cook fettuccine according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta cooks, season chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not let it burn.
- Pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until sauce begins to thicken slightly.
- Reduce heat to low. Gradually stir in grated Parmesan cheese until melted and the sauce is smooth. Season with black pepper and salt to taste.
- Add the cooked fettuccine and cooked chicken back into the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve immediately.
Notes
For extra spice, add a pinch of cayenne pepper to the sauce. You can also add cooked shrimp or sausage for a heartier meal.
