- In a large bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
- Spread a thin layer of whipped cream on the bottom of the 9x13 inch baking dish.
- Arrange a layer of graham crackers over the cream, breaking them as needed to fit. If using full sheets, you may need to trim them.
- Spread about one-third of the remaining whipped cream over the graham crackers.
- Scatter half of the sliced strawberries and half of the blueberries over the cream layer.
- Repeat the layers: graham crackers, whipped cream, strawberries, and blueberries.
- Finish with a final layer of graham crackers and the remaining whipped cream, spreading it evenly.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
- Before serving, you can garnish with additional berries if desired.
Notes
For a different flavor, you can use vanilla wafers or shortbread cookies instead of graham crackers. Ensure all dairy products are cold for best whipping results.
