Ingredients
  

For the Cake
  • 2 packages graham crackers about 14-16 crackers per package
  • 3 cups heavy whipping cream cold
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
For the Topping
  • 2 cups fresh strawberries hulled and sliced
  • 2 cups fresh blueberries

  • 9x13-inch baking dish

Method
 

  1. In a large bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form.
  2. Spread a thin layer of whipped cream on the bottom of the 9x13 inch baking dish.
  3. Arrange a layer of graham crackers over the cream, breaking them as needed to fit. If using full sheets, you may need to trim them.
  4. Spread about one-third of the remaining whipped cream over the graham crackers.
  5. Scatter half of the sliced strawberries and half of the blueberries over the cream layer.
  6. Repeat the layers: graham crackers, whipped cream, strawberries, and blueberries.
  7. Finish with a final layer of graham crackers and the remaining whipped cream, spreading it evenly.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  9. Before serving, you can garnish with additional berries if desired.

Notes

For a different flavor, you can use vanilla wafers or shortbread cookies instead of graham crackers. Ensure all dairy products are cold for best whipping results.
