- Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
- Add the sliced bell peppers and onion to the skillet. Cook, stirring occasionally, until softened, about 5-7 minutes. Add the minced garlic and oregano and cook for another minute until fragrant.
- Return the cooked sausage to the skillet with the vegetables. Stir to combine and cook for another 5 minutes, allowing the flavors to meld.
- Season with salt and black pepper to taste. Serve hot, on its own or with crusty bread, cooked pasta, or rice.
Notes
You can adjust the spice level by using hot Italian sausage or adding a pinch of red pepper flakes. This dish is versatile and can be served in many ways.
