Sausage Breakfast Burritos

Make a batch of these sausage breakfast burritos for a quick and easy breakfast you can freeze and reheat.

Ingredients
  

For the Burritos
  • 1 lb Pork sausage casings removed
  • 8 Large flour tortillas taco-sized
  • 1 cup Shredded cheddar cheese
  • 1 cup Diced cooked potatoes optional
  • 1/2 cup Salsa optional
For the Egg Mixture
  • 6 Large eggs
  • 1/4 cup Milk
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Equipment

  • Large skillet
  • Spatula
  • Large bowl
  • Whisk
  • Taco-sized tortillas
  • Aluminum foil

Method
 

  1. Cook the sausage in a large skillet over medium-high heat, breaking it up with a spatula, until browned and cooked through. Drain off any excess grease.
  2. While the sausage is cooking, whisk together the eggs, milk, salt, and pepper in a large bowl.
  3. Add the egg mixture to the skillet with the cooked sausage. Cook, stirring occasionally, until the eggs are set. If using, stir in the diced potatoes.
  4. Warm the tortillas slightly to make them pliable. You can do this in a dry skillet, microwave, or oven.
  5. Spoon the sausage and egg mixture evenly onto the center of each tortilla. Top with shredded cheese and salsa, if desired.
  6. Fold in the sides of each tortilla, then roll up tightly from the bottom to create a burrito.
  7. Wrap each burrito tightly in aluminum foil. Place the wrapped burritos in a freezer-safe bag or container. Freeze for up to 2 months.
  8. To reheat, remove the foil and microwave the burrito on a plate for 2-3 minutes, or until heated through. You can also reheat in a toaster oven or conventional oven.

Notes

For best results, ensure the burritos are completely cooled before wrapping and freezing. This helps prevent freezer burn.
