For the Chicken and Vegetables
  • 1.5 lb boneless skinless chicken breasts cut into 1/2 inch strips
  • 3 bell peppers thinly sliced (red, yellow, green)
  • 1 onion thinly sliced
  • 2 Tbsp olive oil
  • to taste salt and pepper
For the Spice Mix
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp oregano
For Serving
  • 1 lime juice
  • 3 Tbsp cilantro chopped
  • flour tortillas or lettuce cups
  • Optional toppings sour cream, avocado, shredded cheese, salsa

Method
 

  1. Preheat your oven to 400 degrees F.
  2. Spread the chicken, bell peppers, and onion on a baking sheet. Spray with cooking spray, drizzle with olive oil, and season with salt and pepper.
  3. In a small bowl, combine the chili powder, cumin, paprika, garlic powder, and oregano. Sprinkle this spice mix evenly over the chicken and vegetables. Toss to coat, then spread everything into a single layer on the baking sheet.
  4. Bake for 20 to 25 minutes, tossing halfway through. Continue cooking until the vegetables are tender and the chicken is cooked through. If you want some char on your vegetables, remove the chicken from the baking sheet and place the vegetables under the broiler for 3 to 5 minutes, until the edges start to char slightly.
  5. Drizzle with lime juice and sprinkle with fresh cilantro. Serve with lettuce cups or tortillas and your desired toppings.
