For the Fish
  • 4 mild fish fillets e.g., cod, tilapia, or snapper
  • 1/4 cup olive oil
  • 1 tablespoon fresh ginger grated
  • 1/2 cup kalamata olives pitted and halved
  • 2 tablespoons capers drained
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil and grated ginger.
